Keora (sometimes spelled kewra, kewda or kevda) essence is extracted from a species of tree known as Pandanus odoratissimus. It is extensively used for flavoring dishes, particularly sweet ones, throughout the subcontinent, Sri Lanka and much of Polynesia. While this species of screwpine has fruits that are a major source of food (particularly in Micronesia), it is from its flowers that this delicate and delicious fragrance is extracted and is then made available in the form of Keora water or oil.
