Shan Keema Masala
Ingredients
Mince beef/mutton/chicken 1 kg
Onion 4 or 300 gm (medium finely chopped)
Garlic 1-1/2 tbsp
Ginger 2 tbsp
Green chili 3-4 (finely chopped)
Oil/clarified butter 1-1/2 cup or 175-250 gm
Shan keema spice 1 packet
Method
1. Heat oil/clarified butter and fry onion for 10 minutes.
2. Then add mince, ginger garlic and shan keema spice packet and fry for 15 minutes.
3. Now add 1-2 cup water and cook covered on lower flame for 15-20 minutes or till mince tenderized.
4. Add green chilies and fry till oil comes out.
5. Squeeze lemon juice and sprinkle coriander leaves serve with naan or chapatti.
Dum ka Keema
Ingredients
Mince 1 kg
Raw papaya with skin 1 cup or 200 gm (chopped)
Garlic 1 tbsp (chopped)
Clarified butter/oil 2 cup or 350 gm
Shan keema spice 1 packet
Method
1. Marinate mince with keema masala, raw papaya and garlic and keep a side for 1-2 hours.
2. Heat oil/clarified butter add marinated mince and cook stirring till oil comes out.
3. Light coal piece and put into small steal pot.
4. Keep into the mince pan sprinkle oil drops on coal and cover immediately .
5. Discard coal before serving.
6. Tip for Best Result: Do not add water into dum keema.
