Coconut Cream: Break 200g packed of KTC Pure Creamed Coconut into bowl. Add 450ml warm water. Stir until dissolved. Strain through muslin or fine sieve before use.
Coconut Milk: For coconut milk, stir an extra 150ml water. strain through muslin or a fine sieve before use.
Hint When Using Coconut Cream:
Coconut cream contains some protein. When boiled the protein curdles and separates out. This does not matter in some dishes, but in other recipes such as fish soup, the consistency and flavor are spoiled by boiling the cream. The addition of a little corn flour helps prevent curdling, however it is best to cook the majority of coconut cream dishes at simmering point.
